My Thanksgiving Planner

I have always been a planner and organizer. I was always the one planning and organizing parties, field trips for my brother’s class, vacations, events and family get-togethers.  So, it’s no surprise that I tackle holiday cooking like everything else I plan, make lists and label!  Cooking for Thanksgiving can be STRESSFUL, but if you plan accordingly and remain calm everything should come out great.  This is my Thanksgiving timeline I hope it helps make your holiday cooking a little less stressful.

Two Week Before Thanksgiving

Meal Plan-Make sure you don’t have a bunch of vegetables and no stuffing.

Order-If you’re planning on ordering your turkey, fresh or cooked-do it now! Along with flowers, side dishes, appetizers, rolls, and pies.

Make a list if you’re going to multiple stores list the stores and what you’ll need from each store under it. Don’t forget vegetables, spices, bread, meats, drinks, and dairy.  Also, paper goods like paper towels, napkins, tin foil, paper plates, parchment paper, cellophane and toilet paper.

Buy in Demand Items-Example I know Trader Joe’s always runs out of their turkey stock and this year they started selling turkey bone broth so I buy it early to ensure I’ll have it they also run out of wassail so stock up now.  Trader Joe’s will also start selling their turkeys on November 10th if you want a certain size to buy it early and freeze it.

Prep Your Kitchen-Make sure your pantry and fridge are clean out throw away all expired food and spices, plus the food you are never going to eat.

Buy Your Non-Perishables-If you are like me and hate going shopping the closer it gets to a holiday and you have the pantry space buy your non-perishables now.  I live in Los Angeles and our grocery stores are always crazy busy so I like to do as much ahead of time as I can.

One Week Before

Plan Your Table Setting-Make sure you have enough of everything tablecloths, napkins, plates, and utensils also make sure everything is clean.

Make a Seating Chart-If you know your mother-in-law can’t sit next to your chatting cousin make sure they aren’t sitting next to each other.

Make A Cooking Timeline-Decided what can be cooked ahead of time and what has to be cooked on Thanksgiving.  If you don’t have enough oven space planning what has to be cooked at what temperature and for how long will come in handy.

It’s Finally Fall! Well Sort Of.

It finally falls in Southern California! Ok, our version of what we call fall, which means it’s a cross between warm and chilly our ‘weather’ can vary from morning to night, no matter what, when I think of fall I think of lots and lots of soups!

I come from a family that loved having soup we could eat soup every single day, no matter the weather or time of day. At first getting my husband to adopt my love of having soup was a struggle often he would look at me and say, “soup? It’s summer and 100 out!” But then I made my mom’s albondigas soup and he was hooked on soups. Like they say a way to a man’s heart is through his stomach.

This week is a crazy week my husband started out away for work he came back and started training new hires on how to work overnight at the station when he’s out of town again for work. When he’s away, I usually make a big pot of soup and eat that, salads, fruits and vegetables because I hate cooking for one. Today I made chicken tortilla or chicken enchilada soup-whatever you want to refer to it is fine with me. This soup is full of flavor and protein it’s not only good for lunch and dinner, but it’s perfect for a post-run or workout snack. Now, this is how I make my soup, which works for me, but you can adapt it to whatever works for you.

Chicken Tortilla or Chicken Enchilada Soups

3 chicken breasts-shredded (you can also use a whole chicken, thighs or even rotisserie chicken)
8 cups water
1 ½ tablespoons Better Than Boullion Chicken Base
1 large yellow Spanish onion-diced
2 medium tomatoes-diced
1 jalapeño-seeded and diced
10 sprigs cilantro
4 garlic cloves-chopped
3 canned whole green chilies (diced) or 7 oz. can of fire roasted diced green chilies
1 14 oz. can Mexican fire roasted diced tomatoes with chilies
1 15 oz. can whole black beans-drained and rinsed
12 oz. frozen corn
2 10 oz. can red enchilada sauce (hot or mild)
2 ½ teaspoons ground cumin
1 ½ teaspoons Gebhardt chili powder
2 teaspoons salt
1 cup masa harina
1 cup plus more for garnish medium cheddar cheese grated
1 cup plus more for garnish Monterey Jack cheese grated
4 corn tortillas cut into strips
¼ cup vegetable oil
1 tablespoon olive oil

In a 7-quart pot over medium-low heat, cook 3 chicken breasts in 6 cups of water with Better Than Bouillon Chicken Base until thoroughly cooked once done, remove chicken shred and add it back to the chicken broth lower heat to low. In a food processor, add onion and garlic, pulse until chopped or dice by hand. In a large deep pan over medium heat, add 1 tablespoon olive oil, then add onion and garlic. In the food processor, add bell pepper, pulse until chopped (or chop by hand) add to onion and garlic, cook until tender 5-10 minutes add to broth. Rinse and drain black beans, add to broth. In the food processor, add tomatoes and whole green chilies pulse until slightly smooth add to broth or chop by hand. Open frozen corn and enchilada sauce add to broth, then add cumin, chili powder, and salt. In a bowl, whisk remaining water and masa harina until smooth, add to soup and mix well. Last, add both kinds of cheese mix and cook for 20-30 mins.  While soup is cooking make pico de gallo and tortilla strips rinse food processor, add ½ onion, tomatoes, jalapeño and cilantro pulse until it’s a rough chop. Wipe clean pan add oil heat, add tortilla strips cook until crispy. Serve soup, add garnishes and enjoy!

Grandma Becky’s Tostadas

My grandma wasn’t the best cook, but she had a few dishes that she would regularly make very good, and her tostadas were one of them. She would always use fresh beans, never from a can, and she always added chorizo, which adds extra flavor and spice to the beans. Top off the tostadas with Pico Pica and Cotija Cheese, and you are done.

Ingredients:

2 cups whole or refried pinto beans (preferably fresh but canned is ok)
6 oz. beef chorizo (pork and soy chorizo is ok)
6-10 corn tortillas
2 cups medium cheddar cheese-grated
2 cups tomatoes- diced and seeded
2 cups lettuce-shredded

Optional
Sour Cream
Hot Sauce
Salsa
Cotija Cheese

In a medium pan heated on high heat, place the chorizo, lower to medium-low cover and cook for 4 minutes. Remove lid with a spatula, break up chorizo and continue cooking uncovered for an additional 5 minutes. If using canned whole pinto beans, drain but save the liquid and place beans in a pan; add a little liquid, so it’s not completely dry, increase heat to high, cook until bubbly, then lower heat to low. Once on low, smash the beans with a potato masher or immersion blender until smooth, then continue cooking beans on low until beans are dry. If using fresh beans, do the same as above, place beans in a pan, add liquid as needed, incorporate the beans and chorizo, heat thoroughly on medium-low, and then smash.

While beans are cooking in a small or medium pan, heat 1/4 cup cooking oil. When the oil is hot, place one tortilla in the pan one at a time cook until the tortilla is brown and crispy with tongs, flip and cook the other side until brown and crispy. Place crispy tortilla on a plate with a paper towel or parchment paper to drain and cool. Continue cooking remaining tortillas until all are done.

Take one crispy tortilla shell and place 1-2 tablespoons of beans on the shell, and spread with the back of the spoon all over the tortilla, careful not to break it. Top with tomatoes, lettuce, cheese, sour cream, and favorite hot sauce or salsa.

  1. Side note: We have hot sauce or salsas we used with certain foods tostadas, we use Pico Pica. Now if you haven’t tried Pico Pica well, heck, you have been missing out! It can be hot so use sparingly at first.

Run Girl Run 

July 21, 2016

In 5 days, my training for Run She Is Beautiful starts. I haven’t run consistently in about six years (I’m not counting the here and there runs), I haven’t always gone to the gym in 2 years, and I’m 130 pounds overweight. This is the heaviest I’ve ever been, and I’m not happy about it. A combination of laziness, fertility drugs, injuries, surgeries, and eating well has got me where I am, and enough is enough. I want to be the healthiest I can be before our upcoming wedding and FET! Yes, we are F I N A L L Y getting married!

A Few of My Favorite Things

Happy Tuesday! I wanted to share a few of my #favoritethings that is helping me get through the week and I’ve linked the stores I’ve purchased everything from.

1) My Chemex I can’t say how much I love my Chemex! I brew decaf for myself, specifically Whole Foods Allegro Organic Coffee (various varieties); it is Swiss Water processed vs. chemical; it’s said to be 99.9% decaf, and the Chemex removes any remaining acid that might be in the beans, so it’s great for tummy issues. Our other favorite coffee is from Philz. If you love coffee and haven’t tried Philz, you must.

2.) I finally switched to a sulfate-free shampoo, and it’s helping extend my color; after trying a few I decided on Redken’s Color Extend Magnetics Shampoo & Conditioner; it smells great and cleans without stripping right now; Ulta has a buy 2 get one free deal.

3.) After all the fertility drugs I took last year, my skin discolored in some areas. Sephora + Pantone’s Universe Correct + Conceal Palette is easy to use; you get a user guide and many colors in one container.

4.) I’ve been trying to find a good natural deodorant, and I think I finally found it in PiperWai. Many natural deodorants I tried have way too much baking soda in them, which irritated the heck out of my pits ??. PiperWai is hands down the best out of the 3 I’ve tried; order you up some today!

5.) It is a blowout membership from The Drybar. Now, I know this seems a bit much, but for 75 bucks, you get two blowouts a month +a bday blowout, and these blowouts are the sh*ts! No lie, they are the B E S T! Their products are paraben and sulfate-free, so you don’t have to worry about your color fading or washing out.

Waiting Is The Hardest Part

Tom Petty was right; waiting is the hardest part!

I thought CD1* was starting on Saturday, which meant we could start our fertility meds, but it was a false alarm. It seems the hysteroscopy I had is throwing my cycle off…sigh. This week is reminding me to slow down, give grace, be patient, trust in The Lord (and doctors), and be still all things I struggle with.
This morning at Trader Joe’s, I was reminded that people need grace just like I need grace. Kevin and I discussed things we’ll need in the coming weeks and the lady ringing us up asked if we were trying for a baby. I quickly said with a smile YES! The lady replied, “I’ll give you my 15-year-old for a while, and you won’t want one.” I said, “awe, no thanks. I have a step-son, and I raised my brother, so we know how kids are; we were once one not that long ago *wink smile*. I could have quickly snapped back a snarky remark, but the lady doesn’t know what I’m going through, so instead, I gave her grace.
We got word that we are officially in a fertility drug study! The study pays for most of the IVF cost (yay!!); our portion is only $3,500! YAY again!!! We first heard of the study at the seminar we attended at our clinic with our doctor but didn’t inquire until two months ago. I’m so happy I decided to consider it not just because we’re saving money. Still, my hope is the research will help a fellow TTC** Sisters in the future. There are clinics in several states participating in this study and other studies; if you’re interested, the one in the one I’m doing, here’s a link: The Ivy Study. Now back to waiting on Aunt Flo to arrive!

Maya Massage

This past Wednesday, I had a polypectomy; after the surgery, my doctor came into recovery and enthusiastically told me, “everything looks good, and everything is exactly where it should be!” She also said there were no signs of endometriosis, scar tissue, or adhesions.

After the surgery, I made an appointment for a Maya Massage. I know some women benefit from the massage for me I don’t think it was worth it. Looking back, I wish I had asked for a consultation and had the therapist check to see if I needed a massage or not. Before the massage, the therapist told me that she would check if the uterus is tilted, prolapsed, or out of place. After the massage, I asked what she thought she said, “your uterus didn’t seem out of place, tilted or prolapsed,” basically everything the doctors had told me. I did ask if she thought I needed to come back, she said not unless I wanted to.

Ladies, prior to having anything done, make sure you need it; if there’s absolutely no reason to do something, don’t do it; don’t waste your money. If you have the Maya Massage, make sure you have it at the right time of the month; if the therapist says you can have it anytime, then look elsewhere. As always, consult your doctor before trying anything new.

Our Pain is Different

Last night I came across a crowdsourcing page for a couple asking for donations to help conceive their third child through IVF. The couple said they are just like couples that are unable to create their first child. I was taken aback when I read that. This morning it got me thinking: Is there a difference between couples who are struggling to conceive their first child and those working to create their second, third, or even fourth child? Yes, there is.

We’ve yet to experience all the same aches, pains, and joys you have. We haven’t had the pleasure of a doctor confirming what 20 pregnancy tests told us. We haven’t had the pleasure of our first ultrasound, first kick, peeing like a racehorse, indigestion, food cravings, or food aversions. We haven’t experienced morning sickness, feet swelling, weight gain, and at that moment, we no longer fit into our favorite pair of jeans. We haven’t registered for baby gifts or been given a party celebrating us becoming mothers and fathers. We haven’t seen the joy in our husband’s face when we tell him, “WE’RE PREGNANT!”


If you are having trouble conceiving another child, I’m genuinely sorry, and you are in my prayers, really you are, but please don’t tell me your pain is the same as mine because it’s not. And if you still think your pain is the same as mine, hug your child or children you have in your home and remember I can’t do that.

What Do You Put Your Hope In

After being diagnosed with infertility, I took to Google and searched for every product claiming to aid, help, fix, or cure us. I would send Kevin pictures and say, “we need this” Kevin’s reply was always the same “whatever you think we need.” I was so desperate I would have tried anything, and everything; my desperation and longing for a baby were overshadowing my faith and hope.

One day Kevin asked me what I put my hope in? Is it Google or God? Is it a product making a claim, or is God? I quickly answered God, of course! I heard that question played over and over again in my mind for the next few weeks. One day, I sent Kevin a message while he was at work. I said, “my hope and faith is in God, not Google. I’m going to give everything over to God and no longer worry about my infertility.” That was the day that everything changed for me.

My hope and faith are not found in a bottle of supplements, a book claiming to cure me, a meditation claiming to give me a double line, a bracelet that has healing powers, a life coach or fitness coach that claims they can turn my life around and get me pregnant with a snap of a finger. I’m not saying I’m right or wrong; I’m saying these things are just not the end all be all for me. It doesn’t mean I don’t take supplements; I do or meditate because I do. We should do what makes us feel good. What makes me feel good is to go on living and not let my infertility control my life.

God Will Deliver Us From Our Misery

This year when Starbucks released their Christmas cup collection, I knew instantly which one I wanted. Every time I was out, I would say to myself, “I’ll get it later” Kevin even asked me a few times, and I would say the same thing “I’ll get it later.” Well, a few weeks ago, later came, and the cup sold out online, so I drove to a few stores, and no luck; it seems this cup was so popular it sold out right away. After a trip to a gym outside my area, I decided to stop and see if any stores in that area had the cup. I parked and prayed sort of jokingly, “Lord, this is it; this is the last store I’m stopping (which was the first store) at; please let them have the mug.” God knows my love for mugs, so this prayer doesn’t surprise Him.

I walked in, looked around, and there was MY CUP! I was so excited I walked up to the Barista and said, “I just prayed that you would have this cup, and here it is.” Smiling and laughing, I then said, “God delivers us from our misery.” The Barista replied, “Hallelujah! Yes, HE does!” Taken back, my eyes filled with tears, I looked at the Barista and said, “excuse me?” He replied, “God will always deliver us from misery. God will always redeem us.” I thanked the young man with tears rolling down and told him how much I needed to hear that right now.
I love how God places signs or people in our path to reaffirm what we know to reassure us of His promise to us. I hope this story will do for you what it did for me, and may you know whatever you are going through right now, whatever misery you are in, God will deliver you from it.
